What is Israeli food anyway?! Israel, that little country the size of New Jersey, is a melting pot only 70 years old but with 1000’s of years culinary experience & history. Israeli food historically takes inspiration from North Africa, the Middle East, Eastern Europe, Turkey and Greece, but when young Israelis leave the army, off they go to Southeast Asia & South America to go walkabout for a year, so you can only imagine the modern twists our traditional food have going on! The evolution of Israeli food is exciting & vibrant but celebrates the country’s abundance of cultural history.

I don’t think there’s one single dish or style of cooking that can be called unique to modern Israeli cuisine, but it does have an identity – it’s fresh, healthy, bursting with simple layered flavors that can be eaten day in, day out because they’re not rich & heavy. Israeli food celebrates the ingredient.

Hipsters zip by on scooters alongside men & women looking like something out of a 18th century shtetl. Ancient buildings unchanged for centuries on the outside while a vibrant scene of tech startups is taking the world by storm on the inside.

Israel is the same as it has always been while also being totally different. It’s always evolving, and it’s always frozen in time. Casual yet refined’ish. Homely but sophisticated.

The bustling shuk in Jerusalem sets the scene for what modern Israeli cuisine is. With a dazzling array of fresh produce & the elderly bubbas with their shopping carts haggling for it. Meanwhile hipsters drink negronis in the bars that have suddenly popped up all over this otherwise unchanged scene. So in that picture you have fresh produce, tradition & vibrant, cool fun.
