What is Israeli food anyway?! Israel, that little country the size of New Jersey, is a melting pot only 70 years old but with 1000’s of years culinary experience & history. Israeli food historically takes inspiration from North Africa, the Middle East, Eastern Europe, Turkey and Greece, but when young Israelis leave the army, off they go to Southeast Asia & South America to go walkabout for a year, so you can only imagine the modern twists our traditional food have going on! The evolution of Israeli food is exciting & vibrant but celebrates the country’s abundance of cultural history.
I don’t think there’s one single dish or style of cooking that can be called unique to modern Israeli cuisine, but it does have an identity – it’s fresh, healthy, bursting with simple layered flavors that can be eaten day in, day out because they’re not rich & heavy. Israeli food celebrates the ingredient.
